I very much understand this.... but... we have to realise that starting up from the point of when Universe started or a bit later than it would mean that everything that was so fun to discover in the 10 seasons of SG-1 and 5 seasons of Atlantis, would be already "old knowledge" in the canon.
A lot of the fun in SG was imo the joy of discovery. New worlds, new tech, new aliens, new science. How does the gate really work, who built it, etc.
I think we have to accept that not-rebooting the franchise would sort of direct the attention away from all the gate things and would have to discover something new. Like one-upping the stakes. And if they do that, then there'd also need to be some sort of resolution for Universe, too.
I hope thats what they do, but from an objective writing point, I think the reboot is more likely.
Otherwise it'd be constant exposition dumping, since the show probably won't be aimed at the people who know every bit of Stargate as well as their own pants. Ofc this isn't too hard to achieve in universe, just have someone come in as a new guy to the program, like in Atlantis with Sheppard and whatnot.
I'm just saying, I want to watch the new show in any case, so I'm mentally preparing for it to be a reboot. I'm hoping it will be some sort of soft-ish reboot so it might get to keep at least some of the original things and people. And that they'd incorporate that into the sometimes slightly meta writing, like the famous quip "O'Neill. Two L's!"
Anyway my point is that I very much hope that your options aren't completely mutually exclusive.
