Oh wow, I was born in 96' and did not know that Jaws' shark was called Bruce. The more you know....I just watched the shark scene of Nemo again and there is a referemce to "The Shining" were the shark says "Here comes Brucie" which obviously flew past my head when I watched it for the first time.
Hobbyist here, in my opinion reading the manual or the wiki is easy, understanding it quickly is not. You can obvioulsy follow the instructions blindly and still succeed.
For the most part is very comprehensive but sometimes you are left alone to connect the dots which is very daunting when instructions get technical and you do not understand them.

Logseq Is Obsidian but FOSS, it has a canvas integrated to it. My only problem is that is has a unique flavour of markdown that it will not work well with any other parsers. On the plus side it has lots of community extensions. I would recommend it if you don't mind the markdown flavour.
I had annotated somewhere an F-Droid app that focused on flowcharts. I'll look it up later and edit this comment pointing to it if you are interested.
