I thought it was “it’s” as it’s a possessive apostrophe?

The policies are Apple’s, so it’s would be an appropriate substitution, no?

No, the possessive apostrophe doesn't apply to possessive pronouns. Apostrophes in pronouns are for abbreviations (like "he is" becomes "he's" and "it is" becomes "it's")
