Blue cheese. Cheese in general. More cheese than you think is reasonable, and then a bit more after that

Peas, corn kernels, lemon, chilli flakes, herbs. Any of these will taste good.

Sweet corn kernels were always my favourite in a tuna mornay if you weren’t already using it.

Water chestnuts for crunch. Just don't chop them until they resemble fingernail parings, which can lead to domestic disagreements. Ask me how I know.
