In iOS, the submit control should be active and bold, and the cancel control should be active and not bold. Greyed out controls are generally disabled, not active.

I’ve always liked Don Norman’s stuff. The Design of Everyday Things is a product design classic, and Nielson Norman Group has a lot of great stuff online.
