I was with you until you said bottle.
May I suggest something like Cambazola ? It is a bleu cheese but quite mild, basically all the flavor and none of the bite of Roquefort for example. It's great on bread, and can easily be made into a dip, salad dressing, or sauce.
It's a relatively new cheese specifically developed to be when a mommy Camembert and a daddy Gorgonzola love each other very much.

Maybe give Cambazola a try. It is very rich and creamy. It is a bleu both for people who really like bleu and those who think bleu is too strong.
I won over a friend who 'hates Buckwheat and Bleu cheese' by making crêpes with Cambazola, onion confit, walnuts, and honey. Now they are all in, asking me if I have tried Cabrales.
It's a gateway drug, in a good way
Who would stilton be in this family?
Stilton is quite a bit stronger and less creamy.
