Thunderbolt 4 is a huge disappointment hopefully things improve for eGPUs docks with TB5 and USB 4 v2

A lot of bold claims related to be better for gaming even compared to Tumbleweed. Does it really have a lead on it? Why Gnome instead of KDE?

Kububtu is a good place to start, too. I notice that people recommend Ubuntu but some may be also including the other flavors when saying it. I think KDE is a nice DE, specially because of Dolphin.

No. Signal doesn't have Google service dependencies. Although, you have other problem here that you probably heard before, using a Samsung phone "de-Googled" won't make you free from Google. You should check if possible to get an Pixel with GrapheneOS.
