oooh spicy peanut sauce! YAAS. Lately I've been grating a carrot+zucchini and tossing it in the wok with onion, peanut butter, soy and brown sugar. Then toss through some noodles or rice. But peanut sauce on roast veges might be a good change.

And yeah, once a year about this time I go 'yay pumpkin' then I eat a bunch and go back to sweet potato. I do like some pumpkin soup, or a pumpkin rissoto.

I've gone with a bit of a meditarranean stew (mainly because I need to disguise eggplant's texture!) cooked some white beans, mixed with the eggplant, then did an onion/capsicum/tinned tomato and garlic saute and put it all in the oven. Might roast a potato on the side too.

Roasted and peeled the red and half the green capsicum and mixed with chilli oil and balsamic vinegar as another side.

 

four potatoes, three capsicum, one zucchini, three carrots, one eggplant, on quarter pumpkin, three parsnips, two onions

I got a $30 mystery veggie box from QVM and am planning my weeks food. Thought I would share here for a bit of fun to see what other suggestions I get. I also have some chuck steak in the freezer and a pretty good pantry.

My ideas so far include

  • pumpkin and parsip soup
  • maybe grilling those capsicums as a side dish
  • mashed potatoes and a hearty stew (onions and carrots)

But I am open to suggestions!

thanks to me mistiming things and an empty fridge because I was away all week, I had a three course freezer meal:

3 gyoza to start freezer fish in the oven sweet potato chips (when they crisp up) with sweet chilli and sour cream

Oh and a gin and tonic for sides and, a handful of jelly beans for dessert.

ooh, its more like a five course old-greeeeeegs degustation menu...

Oh yeah! You gotta have that contrast. I used to have dark hair but as it's gone lighter those brows are suddenly a thing. Otherwise I am blergh. Brows and lippy these days. I do miss dark but can't be arsed with upkeep since lock downs

What is your meal planning style? Any good meal planning tips?

I am trying to get better at meal planning because I always start off strong then get bored / run out of food at the end of the week. For while I have been doing a big cook on Sunday but this week I am trying a basic menu and cook as I go. Hoping that having a plan will make it easier.

My plan (one person) is

  • red lentil curry + coconut rice (3 serves made today)
  • instant pot spag Bol (3 serves made Monday night)
  • a beef stir-fry (X 2 serves) made wed night
  • quick ramen noodles + stock and frozen veg in between

Ideally I would prep veg today but I have been away and am tired and can't be bothered so will prep as I go.

What other things are people doing?

 

Fingers crossed its not H5N1.

 

My old xps13 is old in the tooth and the new ones have some things I don't like. So I am after recommendations. My preferences

  • Linux (Ubuntu/Debian friendly). Happy to wipe and install and will check compatibility beforehand but if anyone has a Linux daily driver they love let me know
  • good CPU and decent RAM (32gb would be nice)
  • Lightweight - smaller preferred (currently on a 13" and happy)
  • Touchscreen would be nice
  • Usb-c
  • Decent battery life

I have access to other machines for heavy GPU stuff that's not as important as CPU and RAM.

Uses:

  • Programming/terminal use
  • Reading docs and papers
  • Watching movies etc
  • No gaming

That's my wishlist. What do you suggest, Aussie tech friends?

 

Anyone have an instant pot? Any foolproof recipes? I just got one (thanks Santa) and wondering where to start.
