I know this is a meme, but I ran into this same issue and it was due to the fact that the length of the tubing between my wall and toilet was too long. Once I got a shorter tube the pressure went up significantly.
I have the opposite problem. You have to just barely turn it on.
So make a loop of tubing

They have these flow limiters that they add to showerheads I bet you could get or make one for your bidet
I recently got a Moen and has a max pressure setting that mixes some air and it works great
I also have a brondell and it's kinda weak, I'll try your "hack"
