A significant proportion of job vacancies are vaporware vacancies and they're doing shit like harvesting personal details and creating the impression that their company is in a period of growth or economic strength when they actually aren't.
It's super gross and predatory but capitalism is a sick game.
Try not to take it too hard, is what I'm saying.
You might want to try coaching specifically with regards to interview skills if you feel like that's what is letting you down.
You might also consider aiming for companies in your field of preference but applying for a generalist role (e.g. secretarial, data entry, customer service) to get your foot in the door with which to parlay that into a job that's closer to your desired role.
