Made juice from pineapple skins and let it sit in my fridge sealed for a long ass time. I opened it today, expecting it to be trash, but to my surprise it was totally fine. Assuming that the yeast from the pineapple skin kicked in. Pretty damn tasty too. 10/10, would recommend, although I'd recommend actually doing this intentionally

I make hard cider sometimes and folks are always really impressed. They don't believe me when I say you literally just put apple cider and yeast in a big bottle for a few weeks. Bam. Hard cider. It's literally that easy.

Kinda no reason not to make stuff like this yourself sometimes. It's easy and satisfying as fuck. Everyone who drinks should try it

We should bring back prohibition for, like, half a decade just so people can appreciate how fucking easy it is to brew alcohol ~~and also to bolster the labor movement with renewed ties to organized crime~~

I like how all the California wineries that survived Prohibition did so either because they got special dispensations to make sacramental wine or they just made, like, grape juice concentrate with big warnings on them like: "DO NOT STORE THIS IN A COOL DARK PLACE AFTER ADDING X AMOUNT OF WATER".

is there a guide to this? ive heard that methanol is a byproduct of that process and kinda don't wanna go blind

Methanol pretty much only comes from distillation, or cutting something with industrial-grade alcohol. If you're fermenting apple juice there might be a tiny amount of methanol, enough to give you a hangover but not enough to make you go blind.

You can just add yeast to a jug of apple juice and let it sit with the cap on loose for a week or two and it will make something with alcohol in it, but if you want it to consistently taste good there's a little bit more involved. Still, it's one of the easiest ways to make your own booze.

I actually think I might brew a pineapple wine soon, because of this post. I think a really dry sparkling wine would work well with pineapple's flavor.

I'm pretty big on homebrewing. Mead in the style of tepache (low alcohol, the fermentation is for carbonation) is my personal favorite.
