I've always fried the tortillas and cooked the beans separately so the tortilla doesn't get soggy.

I'd also stick to refried beans unless you're gonna mash the others at least some so there is bean adhesion. Then I would add cheese and any sauces before piling on the salad mix so there's minimal messiness if you're eating it like a pizza slice.
how do you fry them? pan fry with a lil evoo til crispy? flour or corn?
I don't know what evoo is but I use corn tortillas and vegetable oil of your choice. I usually try to fry them until they're almost brown and have some structural integrity.
Extra virgin olive oil
you can put it into an oven safe bowl (we use thicker ceramic ones) and bake it?
put tortilla in bowl, cook whatever you need to cook for them, layer the beans cheese and other ingredients at the bottom of tortilla, bake for a bit, take out (safely it will be hot) and then put in the fresher ingredients like lettuce tomato guac salsa sour crema etc.
let it cool down, serve in bowl with maybe a knife.
i do have a big black ceramic bowl! never thought to use it for this
Ours are like big cereal bowls but they work fine for the job.
