I always took this as less a "oh no we don't get to eat meat anymore" and more a "holy shit everything is extinct because of climate disaster" whenever it shows up in cyberpunk stories.
Afaik, that is explicitly true in the Cyberpunk 2020 (Red, 2077) universe.
Something more disturbing about the present where the omnis would rather grow grains and pulses for their treats over people.

No, you get literal kibble like the kind they make for dogs and macrobacteria that produce an excess of protein
I already eat kibble out of a dog bowl so I don't see the problem tbh
You do it with a robot jaw now and also you have to pay royalties to the kibble company for every bite
My favorite parts of cyberpunk books are how some things aren't as dystopian in retrospect, and how wildly clashing the tech levels can be.
There's a part in "Trouble and Her Friends" from 1994 where a character on a bus overhears some people talking about a recent congressional bill, so he heads into a bar to watch the news on TV. This is a setting where people have fully cybernetic brains and go into a fully realized VR world and people still have big tube TVs. I'm pretty sure pagers are mentioned a few times as well.
Also that book is great and it was the first time I remember seeing openly queer characters in fiction.
The last time I read Neuromancer was in the 2000s and didn't even get that flat screen TVs were supposed to be futuristic. Of course the most obviously dated part is the 8 MB of hot RAM at the beginning.
I appreciate that Snow Crash still has a nice mix of tech which in retrospect decades later is quaint, plausible and fanciful. E.g. skateboard wheels that shape themselves in realtime to confirm to a scan of the ground ahead of them.
If I could live entirely off of pills like they do in some dystopia stories, I would. Eating is a chore for me. Give me a handful of tasteless pills instead of each meal and I'm happy.

The shittier cyberpunkerino dystopia we're already living in has less adventure, less opportunity for individual agency, and it can't even do the plant-based substitutes in a systemic way so it's full of DAE LE EPIC BACON deeply insecure performative dudebro carninists, and they're the type that want to LARP the cyberpunkerino dystopia because they're computer touchers that are affluent and comfortable enough in the dystopia that they only think of the neon and the hawt trophy cyber-waifu that will sexy sex them if they "hack the planet" enough for their military-industrial-surveillance employer.

If I could enjoy meat without involving animal cruelty, I would, steak is delicious but the bitter taste of death not so much.
I think it was supposed to be like you will be stuck with some corporate chemical concoction unless you are rich and can afford real coffe and real etc
