I watched this speed chess game live and the move blew my mind.

Two exclams is a brilliant move. Discovered checks can be nasty and that's true here. The discovered checks of the bishop are devastating.

White's move blew my mind but after I saw that - I could easily see this very simple continuation: check, kill the bishop, check, kill the queen and it's effectively game over.

You don't take with the king, bxg6. But that leads to a windmill which loses all pieces lol

What's to stop the king from taking the queen though?

Nothing. But then white moves the rook to g7 (protected by the bishop, so can't be taken by the king) and checkmates instantly
