I went to school for like ag and food shit, so I learned the grading system. the real terms are more dystopian, because of course the the optics of anything that doesn't look amazing would be bad for industry.
so, I invite you all to see the beef quality grades in the US from highest to lowest:

- choice
- select
- (if you're at a grocery store and you're buying beef as an ingredient to take home and prepare food, it is one of the ones above this line... below this point is entering the Dark Territory)

Phó is largely cartilage and offal and it may be the most delicious soup in the world.
I order my pho with extra tendon. Shit's delicious.
I love cartilage and offal. Never really understood the brainworms people have that makes some part of an animal less gross to eat than other parts. It's all just taste and texture.
I only eat meat as a rare treat these days, but when I do I'll often use heart or liver or something.

I do this with my dog but because I'm not a freak we just share human food while I cook. fruit & veggie trimmings, meat scraps, etc. no product required.
I'd be cleaning off my carrots with a peeler and instead of throwing them in the trash if just have my dog come over and have him gobble up all the trimmings. He was an absolute veggie fiend
